Pesto squash spaghetti

Spaghetti squash is one my favorite alternatives when I want a grain free dinner. It takes a little longer to cook but it's definitely worth it. Toss it up with any of your usual pasta sauces
recipe follows
Ingredients: 
1 spaghetti squash
box of rocket 
pesto (see pesto recipe)
1 chicken breast (optional)
cherry tomatoes
pistachios 
brussel sprouts
lemon
olive oil
garlic 
zucchini 

1. preheat oven to 350, slice squash in half. Remove seeds and cover inside with olive oil. Place the two halves face DOWN on a baking pan, place in oven for 30-40 min
2. sautee rocket in olive oil and lemon, put aside 
4. pan fry brussel sprouts and zucchini in garlic and olive oil. add to rocket 
5. cut the chicken and pan fry in coconut oil, put aside 
6. when the squash is done, turn it over and start scrapping out the inside with a fork 
7. place all the spaghetti in a bowl and mix in the pesto 
8. place the rocket mixture in your bowl, then add the spaghetti on top, chicken, pistachios and tomatoes 
9. add any other flavors or garnishes you want and enjoy
