So Burt was a bit of a tricky situation at first as we really had no idea what we were doing...
Make the marinate first:
apple sauce
maple syrup
cinnamon
apple cider vinegar
salt
minced garlic
chuck all the ingredients in a blender and set aside
now for the turkey, preheat the oven to 345
unwrap and rinse him down - be careful I was lucky enough to get some turkey blood spatters upon un wrapping him.
Stuff 2 lemons, 2 red onions chopped, thyme, butter and some salt up him tush. You really want to get it in there
Now place him on a rack and pan like shown in the oven
Pour about 2 cups of chicken broth in the bottom of the pan. Rub the glaze all over and sprinkle him with salt
turn the oven down to 350 and place the turkey on the middle rack
Burty was 11 pounds and took around 3 hrs 20 min - every 40 min you want to pour broth on him and in the pan
when a temperature stick inserted is 164 your turkey is good to go
* note - you may also have to swivel the pan so the other side of his body is facing the back of the oven half way through, to get an all over even colour
