Spinach spaghetti salad

This is an easy and healthy dinner when you still want pasta but need those greens.

Ingredients:
rocket
Tinkyada brown rice pasta spinach spaghetti 
2 small beets
1 leek
half a zucchini 
1/2 cup frozen peas 
olive oil
garlic
balsamic 
lemon

1. boil a pot of water - add salt
2. preheat oven to 400
3. cut beetroot and place in a baking dish with olive oil and balsamic - place in oven for 20-25 min
4. Once water is boiled place pasta in - usually takes 10-12 min (check around 9 min as you don't want it to get soggy) 
5. cut up zucchini and leeks
6. place them in a pan with olive oil and garlic 
7. add peas
8. add pasta too the veggies and sautée with more olive oil
9. place pasta and veggies on a handful of rocket, add cooked beetroot ontop
