recipe follows
Ingredients:
1 beetroot
spinach
basil
coriander
olive oil
lemon
pine nuts
parmesan cheese
salt
truffle oil (optional add in)
1. I basically do a handful of each of the greens and then add more of what needs more taste - so add all greens, one beetroot and 3 tablespoons of olive oil in food processor
2. add handful of cheese and pine nuts
3. squeeze one lemon and sprinkle salt - continue to pulse
4. now if the mixture isn't pasty enough continue adding more olive oil (and this is where I add the truffle oil) until it becomes creamy
