coco quinoa

This is a way to change the usual quinoa. On my diet I'm eating it almost three times a week so I have to find new ways to cook it other wise I'll cry (well not actually)
recipe follows 
Ingredients
1/2 cup quinoa
1 cup coco milk 
cumin 
salt 
pepper
shoe string green beans 
dried cranberries
butternut squash
spinach 
sesame seeds

1.toss your beans and cut butternut squash in olive oil, garlic and salt place in a 375 pre heated oven for about 30 min
2. rinse your quinoa and place in a sauce pan w olive oil
3. add the coco milk and bring to boil - reduce to simmer for about 15 min 
4. When veggies and quinoa are done toss everything together with spinach and sesame seeds, place dried cranberries or what ever other garnish you want on top
enjoy!
