breakfast for champions

basically this breakfast/lunch was so good because of the amounts of maple syrup. I needed something with a lot of protein but I also wanted it to be sweet and I was inspired by one of my friends breakfasts yesterday. Solution was to make buckwheat pancakes, avo smeared on top, then a fried egg all doused in maple syrup with some raspberries on the side.


Ingredients:
1/2 cup buckwheat flour
1/2 cup or more of almond milk ( I used my date, coco milk, cinnamon almond milk to add flavor) 
1 egg
coco oil

half an avocado
1 egg
handful of raspberries 
MAPLE SYRUP 

for the pancakes:
Mix all the ingredients together except the coco oil. Add extra milk as needed - you want the mixture to be thick but pourable. 
douse the pan in coco oil and then spoon on the pancake. Let it sit until fully cooked and then flip. repeat. 

cover the pancakes in avo or whatever you fancy, pace a fried egg on top and then pour on the maple syrup, and there you go.
