Ingredients
For the base:
5 tbsp coco oil
3 tbsp maple syrup
2 cups shredded coconut
teeny less than 1 cup almond flour
pinch of salt
2 egg whites (save the yolks for the filling)
filling:
3 eggs plus those two egg yolks
6 tbsp maple syrup
1/3 cup lemon juice
1/3 cup almond flour
pre heat oven to 350
melt the coco oil on the stove top, add the shredded coconut, almond flour, salt and maple syrup and stir until all is combined
remove from heat and stir in the 2 egg whites until the mixture is sticky
line a 8 X 8 baking dish
pour in the mixture and press it down with your fingers to form the base
place in the oven 11 minutes
Mean while make the filling
In a stand up mixer beat all the eggs together until a frothy mixture is formed
add the rest of the ingredients and mix until all is combined
pour over the crust
place back in the oven for about 17 minutes
let the bars cool for 20 before eating so it can set
