Packed Meal

This is a super quick and easy meal to make that you can bring anywhere and it's packed with protein to keep you full.

recipe follows 
Ingredients:
white pearl quinoa 
yellow capsicum 
tofu
minced garlic 
tahini 

1. rinse 1/2 cup quinoa then sautee for 1 minute in a sauce pan with oil and salt 
2. add 1 cup of water and bring to boil, cover, reduce to simmer and let sit for 15 minutes 
3. Meanwhile use a paper towel to soak up the excess water from the tofu
4. Cut it into cubes and place in a sauce pan with garlic and olive oil 
5. after about 5 minutes add the capsicum 
6. combine all ingredients with tahini 

c'est fini!
