Snapper with mint pea puree

The idea came for this meal from seeing multiple recipes and deciding to combine them all together in one, it does take some prep time but is perfect for entertaining

recipe follows 
Ingredients:

2 snapper fillets 
1 cup of peas 
1/2 cup fresh mint leaves 
parmesan cheese 
olive oil
salt 
butternut squash cubed 
raw almonds, chopped 
proschiutto 

prepare the fillets by marinating them in olive oil, lemon and salt 
mean while make the puree by combining the peas, mint, olive oil, cheese and salt in a food processor. You can choose to make it a real puree or more of a dry one
place aside 

pre heat your oven to 375 and place the cubed butter nut squash inside 
prepare the almonds by chopping them and tearing the proschiutto 
when the butter nut squash is almost ready place the almonds and proschiutto with them in the oven 
continue baking for 10 more minutes 
during this 10 minutes make your fish 
preheat a pan and place the fish skin side down 
place a spatula ontop for 30 seconds so the skin does not curl 
continue cooking until done 

to serve:
place the puree on the plate, then fish on top followed by everything else 
serve immediately and enjoy
