Chestnut crepes & assortments

These crepes are one of my fav dishes, there super easy to make and have a unique yummy taste. Pair them with whatever your feeling, for this dinner I did honey sauteed chicken & onions, glazed brussel sprouts, potatoes, spinach, avocado, tahini and pesto !!

For the Crepes 

mix together 1 cup chestnut flour 
1 cup coconut milk 
1/4 cup finely chopped parsley 
salt 
2 eggs 
1/4 stick melted butter 

once the mixture is smooth place in the fridge for at least one hour before making 
* makes around 8 crepes 

For the onion and chicken

slice up your cutlet and onions length wise
toss in a pan with olive oil, garlic, honey and salt
cook until golden 

add anything else you fancy to this dish
voila !
