Ingredients
1/2 cup wild rice
1/2 cup quinoa
chopped almonds
pine nuts
chicken breast
rocket
in two pots bring the water and grains to boil - note wild rice will take about 25 min to cook while quinoa only takes 15
pan roast the almonds and pine nuts
cook your chicken in the oven by marinating it in olive oil and tamari
when everything is ready combine the grains, nuts and rocket together, lay chicken over and (optional) prosciutto. I also made this dish with a veggie burger which was just as yummy
