Family dinner

For this family dinner I decided to make a combination of foods to satisfy all the picky eaters. The menu consisted of tamari and honey chicken, collard leaf falafel's, sweet potato gratin and a chocolate hazelnut cake for dessert.

recipe's follow 
Sweet potato gratin 

Ingredients:
3 large organic sweet potatoes, scrubbed clean and cut length wise
2 cups or more of grated parmesan cheese 
2 cups of almond milk 
salt and pepper

preheat oven to 400 degrees
once all the SP are cut place them in a baking dish, creating a layered effect 
sprinkle with salt and pepper and pour the milk in the dish, covering the SP
place in oven for 30 minutes 
after the 30 minutes check if the milk has been absorbed, if not put in for another 10 minutes
if after these 10 minutes the milk has not been absorbed pour out some
place cheese on top and place back in oven until crispy 

Honey & Tamari chicken 
preheat oven to 375
place chicken in a mixing bowl and pour olive oil, tamari and honey in
mix together until chicken is covered 
transfer to a baking dish and place in oven for around 30-40 minutes 

Falafels 
Ingredients:
one bunch of collard greens (to prepare: flip it over back side up, using a sharp knife slice the excess of the stem off from the leave and cut the end off)
1 can of chickpeas 
2 tbsp of tahini or hummus 
juice from half a lemon
4 tbsp oat flour 
salt and pepper

combine all ingredients in a food processor until a type of paste has formed 
preheat a pan with olive oil
form small flat balls out of the mixture and place onto pan
cook for around 5-7 minutes on each side
serve with tahini and lemon juice
