Pad Thai dinner for two

Usually when I make my vegan pad thai I use rice noodles, but I was looking for a grain free option. I instead used mung bean fettuccine which is made 100% from beans, e.g no grains and it turned out just as good

recipe follows 
Ingredients 
1 pack of Explore Asian mung bean fettuccine
1/3 cup organic raw peanuts 
2 organic chicken cutlets 
shallots 

for the sauce:
almond butter
white rice vinegar 
sesame oil
tamari sauce 
coconut oil

bring water to boil and place pasta in 
meanwhile cut up chicken and cook in a pan with coconut oil, salt and pepper
once pasta is cooked combine with chicken and sliced shallots 
for the sauce mix in one scoop of almond butter and as much or as little of the other ingredients - taste as you go
roast the peanuts on frying pan and serve on top
voila you have a yummy grain free dinner!
