Vegan toasted cocont pancakes

My pancake obession continues with these vegan spelt toasted coconut pancakes. They're a little more time consuming than my normal buckwheat pancakes, but they def are worth it. The toasted coconut brings a certain delish to the pancakes that you don't normally find.

Morning oats

Oat are a staple for me for breakfast, and you can really eat them anyway you want. My new fav combo is coconut and chocolate.

Mix oats with coconut milk and place in microwave. Heat to your desired consistency
add in chocolate chips and stir. Add coco yogurt, raspberries, coco flakes and cut apple 

add anything else you want and enjoy !   

New Year, New Cookies

This year I've decided to try experimenting with gluten.... very slowly. I'm only sticking to things that are 100 % spelt, rye or Durum wheat. So far it's been amazing. It makes my life just that much simpler. So my local bakery has the most amazing spelt oatmeal cookies but they are not vegan. So I went about making spelt vegan cookies and it turned out fab.

Vegan chocolate chip cookies
Ingredients:
1 1/3 cup organic spelt flour
1/4 coco palm sugar
 1/2 tsp baking powder
sprinkle of sea salt
1/3 cup + 3 tbsp melted coco oil
1/2 cup chocolate chips (or more)

preheat oven to 350
mix all ingredients together, the batter should be a little oily from the coco oil
form into small little balls and place on baking sheet
place in oven for around 15 minutes, watch them carefully you don't want them to be too hard

Dip in with your morning coffee and voila

Vegan Pancakes

I've recently found out I can not have egg whites... which makes baking very hard. I've never had much luck at finding a good vegan pancake recipe so I finally made one up and it seemed to work.

Home made cookies

My mum wanted some cookies but she's recently developed new allergies so I had to really put my head together to make these. 
The Ingredients are super simple,
GF rolled oats
raspberries 
cacao
chocolate chips 
walnut spread
coconut flour 
melted vegan butter
maple syrup

there are no real measurements but until your form a doughy consistency keep adding the maple syrup and butter. 

Form cookie balls and place in oven at 350 for 10-15 minutes
