Vegan toasted cocont pancakes

My pancake obession continues with these vegan spelt toasted coconut pancakes. They're a little more time consuming than my normal buckwheat pancakes, but they def are worth it. The toasted coconut brings a certain delish to the pancakes that you don't normally find.
recipe follows 

Start by preheating your oven to 300 
Place 2/3 cup of coconut flakes on a baking tray and place in the oven
keep a really close eye on them, and mix around for about 3 minutes 
as soon as they look golden and toasty, take them out and put aside 

Then make your flax egg - 1 tbsp of flax with 3 tbsp water. Mix together and place in fridge 

Combine your toasted coconut with 3 tbsp coco sugar in a blender. Blend until fully incorporated 
put aside 

Combine your dry ingredients:
1 cup spelt flour
1 1/2 tsp baking powder 
2 tbsp oat flour 
pinch of salt 

mix in your wet ingredients:
2 tbsp melted coco oil
1 cup or more of rice milk - more milk you add the thinner your batter will be ( you can even add a little water to thin it out )
1 tbsp maple syrup
your flax egg

after combing that yummy stuff mix in your toasted coconut mixture 

Heat up a skillet and spray some coco oil on top
enjoy making your little fluffy toasted coconut circles of heaven 
top with anything and everything
